After making this recipe at least 5 times, I’m finally ready to share my new favorite pizza crust….and it’s made from cauliflower! I always wanted to try a cauliflower crust but felt it was too time-consuming, from cutting up a head of cauliflower to mincing it with the food processor and steaming it – all before you even begin making the recipe. However, the Paleo crust I had been making was simply too ‘heavy’ and dense (it was almond and coconut flour along with eggs, so pretty fat- and calorie-dense, despite being better than regular flour).

I admit I’m a huge fan of the royal family and have woken up way too early to watch both Kate and Meghan’s wedding – but I didn’t have kids in 2011 so I had tons more energy for the first one! We actually crossed a few things off our to-do list this weekend though and created some new projects for ourselves after two trips to Lowe’s…whoops. This warm weather has me wanting to plant more flowers and make the yard a place to spend all our time this summer – and we’re actually working on a little patio project for our grilling area. Speaking of grilling, I’m looking forward to this week’s clean eating meal plan. Some of this week’s dinner ideas are new and a few haven’t made an appearance in a while – read on for the details!
Happy Monday! This is the first week of summer in our house since preschool ended last week – not to mention, it’s also going to be 90+ degrees every day – yikes! I’m over here trying to make a plan for the week because I think we’ll go crazy if we don’t have anything to do 🙂 With that said, I’m keeping dinner ideas simple this week! Hi y’all – happy Monday! We’ve had some gorgeous weather lately and it looks like it’s here to stay – so bring on the summer menu! We usually grill a lot when it gets warm, but it’s easier for me to get dinner started indoors while my husband is on his way home from work (which helps get the girls to bed on time!), so we’ll probably save grilling for weekends.
