Weekly Meal Plan | Ninth Edition

Guys, I am so behind this week! I DID actually meal plan for the week – but I haven’t had a moment to share it with y’all…until now! I’ve been incorporating some new recipes into our meal plan for the past month or so, since it’s easy to get in a dinner rut – and we’ve had some winners that I’d make again! I definitely need to share a round-up of my favorites soon.

Monday

Crockpot-Garlicky-Cuban-Pork

Skinnytaste Garlicky Cuban Pork, Crispy Ranch Potatoes + Green Beans – I used my slow cooker since I don’t have an Instant Pot and it turned out great!

Tuesday

Paleo Turkey Meatloaf, Mashed Cauliflower + Broccoli – The meatloaf didn’t stick together very well, but my girls cleaned their plates(!), so this was a winner in my book.

Wednesday

Salsa Verde Chicken

Salsa Chicken, Mexican Cauliflower Rice + Green Beans – This is my quick and easy go-to on nights where I head to Pure Barre after my husband is home from work…I just throw the chicken into the slow cooker and it’s ready by the time I’m home.

Thursday

Twice-Baked Sweet Potatoes + Peas – This is a new recipe for us and I hope it tastes as good as it sounds!

Friday

Pizza – We always do pizza on Fridays and it’s usually the one night I’ll eat flour/grains and not strictly follow my typical clean eating. However, I think I’m going to test out a gluten-free flour or cauliflower crust, because honestly grains/flour make me feel lethargic! I never realized this until switching over to W30/Paleo eating, but I’ve pinpointed now when I eat flour, I just feel so terrible for days afterward.
