Happy Monday! I️ totally dropped the ball last week on meal planning, but I️ made a plan this week and I️’m going to try and stick to it. After all, NEXT WEEK is Thanksgiving week(!) and I️ like to eat as healthily as possible this time of year most days since there will be some not-so-healthy meals coming up. 🙂 I️ hope to get a post up sharing my favorite Thanksgiving recipes, including some dairy- and gluten-free ideas – so stay tuned for that!
This Week’s Clean Eating Meal Plan
Chicken Sausage, Spinach + Cauliflower Rice Skillet – This is one of the easiest dinners to pull together and I️ love that it’s a lower carb option (if you’re following FWTFL, there are a few low carb days!).
Slow Cooker Buffalo Chicken, Roasted Potatoes + Broccoli – I️ always forget about this one, but it has such a good flavor and it’s versatile – you can serve it with cauliflower rice, sweet potatoes, regular potatoes, etc.
Sausage + Sweet Potato Hash – This is a recipe that we don’t make often enough, but it’s a favorite around here! It’s super basic so the girls love it, too.
Coconut Curry Chicken Meatballs, Brown Rice + Green Beans – I️’ve also made these meatballs with ground turkey, and they’re good either way!
Cauliflower Crust Pizza – Actually using a Trader Joe’s Butternut Squash crust this time, but this is my fave cauliflower crust recipe.
