Happy Monday, y’all! We finally had a beautiful weekend with gorgeous sunshine and warm weather the entire time…it’s been a long time coming! I knew we would want to spend as much time outdoors as possible this weekend, so I decided to prep my clean eating meal plan early and grab groceries on Friday evening so we wouldn’t be running errands and missing the sunny weather. On this week’s menu, I added some things in we haven’t had in a while and the best part is there are two slow cooker recipes – which means little prep involved (yay)! Here is this week’s clean eating meal plan:
Monday
NC BBQ Pulled Pork (similar recipe), Garlic Herb Potatoes + Green Beans – Memphis BBQ is good, but being from southern Virginia means we grew up with a different style of BBQ – so we like to make our own from time to time. We just use a pork loin or tenderloin for ours and we have leftovers for days!
Tuesday
Twice-Baked Sweet Potatoes + Peas – I made these for dinner a few months ago and really loved the flavor. Admittedly, sweet potato skins don’t hold up quite as well as regular potatoes but once you get the technique down, it works pretty well.
Wednesday
Slow Cooker Salsa Chicken + Mexican Cauliflower Rice – One of my go-to’s because of how simple it is! So versatile, too – you can make a taco salad or even a burrito bowl with these ingredients.
Thursday
Turkey Sausage Sheet Pan – Literally the most simple dinner and my girls will eat it with no complaints!
Friday
Pizza – I tried a different cauliflower crust for mine this past week and it was delish – I hope to share it on the blog ASAP.
