Hi y’all – happy Monday! We’ve had some gorgeous weather lately and it looks like it’s here to stay – so bring on the summer menu! We usually grill a lot when it gets warm, but it’s easier for me to get dinner started indoors while my husband is on his way home from work (which helps get the girls to bed on time!), so we’ll probably save grilling for weekends. How about you – do you grill often?
I love cooking and don’t mind spending time in the kitchen, but since I started doing 80 Day Obsession, I’ve been spending more time working out in the afternoon so quicker meals are where it’s at lately 😉 I’m excited about this week’s clean eating meal plan because we’re trying two new things – here’s hoping they turn out great!
Monday
Slow Cooker Sweet Chili Chicken, Cilantro Lime Cauliflower Rice + Broccoli – I’m going to use coconut aminos instead of soy sauce and tapioca starch in place of cornstarch to make this a bit more healthy. Also, going to serve it over cauliflower rice with avocado and mango!
Tuesday
Mexican Twice-Baked Potatoes (similar recipe) + Green Beans – I’m loosely following the version linked above but will obviously be using regular potatoes and also ground turkey rather than chicken.
Wednesday
Paleo BBQ Chicken Casserole + Peas – This is my husband’s favorite dinner. I’m pretty sure he’d eat this every week, but I tend to like a little more variety than that 😉 It’s really good, though, and good for you!
Thursday
Loaded Sweet Potato Fries – I haven’t decided if I’m going to use ground turkey or turkey sausage for these, but will definitely be adding peppers, sauteed spinach, etc. Yum!
Friday
Pizza – I’ve been making a cauliflower crust for several weeks and I think I’ve perfected the recipe, so hopefully I’ll be able to share it on the blog next week!
