Happy Monday! This is the first week of summer in our house since preschool ended last week – not to mention, it’s also going to be 90+ degrees every day – yikes! I’m over here trying to make a plan for the week because I think we’ll go crazy if we don’t have anything to do 🙂 With that said, I’m keeping dinner ideas simple this week! For this week’s clean eating meal plan, I’m pairing a few tried and true recipes with a few new ideas.

Slow Cooker Hawaiian Chicken, Cilantro Lime Cauliflower Rice + Peas – This is one of my favorite ways to cook chicken and I like making extra to have for lunches during the week!
Egg Roll in a Bowl, Roasted Carrots + Green Beans – One of my favorite recipes – it’s quick and tastes delicious!
Coconut Curry Meatballs, Roasted Potatoes + Broccoli – The sauce that accompanies these meatballs is so creamy, yet still healthy.
Sausage, Spinach, Apples + Riced Cauliflower – This is a new recipe that I’m looking forward to – you really can’t go wrong with sauteed spinach and apples over sausage!
Pizza – I’ve made my cauliflower crust recipe 3 times now and I think I’ve perfected it enough to share soon – I just need to snap some photos this Friday while I’m prepping it!
