Happy Monday! I hope you had a fun weekend – did anyone watch the Royal Wedding? I admit I’m a huge fan of the royal family and have woken up way too early to watch both Kate and Meghan’s wedding – but I didn’t have kids in 2011 so I had tons more energy for the first one! We actually crossed a few things off our to-do list this weekend though and created some new projects for ourselves after two trips to Lowe’s…whoops. This warm weather has me wanting to plant more flowers and make the yard a place to spend all our time this summer – and we’re actually working on a little patio project for our grilling area. Speaking of grilling, I’m looking forward to this week’s clean eating meal plan. Some of this week’s dinner ideas are new and a few haven’t made an appearance in a while – read on for the details!
Monday
Slow Cooker Teriyaki Chicken, Riced Cauliflower + Broccoli – This is a new recipe, but I love teriyaki chicken and throwing dinner in the crockpot, so it’s the perfect combo!
Tuesday
Grilled Pork Tenderloin Medallions, Dijon Roasted Potatoes + Green Beans – My husband will usually cut a pork tenderloin into semi-thin slices (medallions) and I think I’m going to do a cilantro lime marinade on them this time. The potatoes are also a new recipe so I hope they turn out great!
Wednesday
Deconstructed Stuffed Peppers – I’m the only one in my house that will eat the pepper when we do stuffed peppers, so I started making it in a casserole dish and cutting up the peppers into small chunks instead and mixing them in with the ground turkey, tomato sauce and quinoa. That way, everyone will eat at least SOME pepper even if it’s accidentally. I usually follow a 21 Day Fix recipe for these and use quinoa and a sprinkle of vegan cheese so technically not Paleo but still good for you!
Thursday
Paleo Barbecue Chicken Casserole + Peas – We’ve had this on the menu for several weeks and I keep pushing it back because I always forget to cook a spaghetti squash beforehand…oops!
Friday
Pizza – I finally snapped some photos when making my cauliflower pizza crust last week so I plan to share my recipe this week on the blog!
