Happy Monday! Hope you had a great weekend – the weather here was fantastic and we even snuck in a date night to see Rascal Flatts on Friday (thanks to my mom for keeping the girls!). When planning this week’s clean eating meal plan, I decided to keep things simple and chose a few of my favorite recipes and several others that are healthy, yet easy to prep. I just got a veggie spiralizer at HomeGoods so I’m excited to test it out by making some zoodles for spaghetti this week. I hope it works well because making my own veggie pasta is a game-changer and means we’ll eat it more often! I have a hard time paying $5 for a small container of zoodles, to be honest…so we rarely eat them. 🙂
Here is our clean eating meal plan for the week:
Monday
Slow Cooker Garlic Honey Chicken, Riced Cauliflower + Broccoli – This is one of my favorite chicken recipes and bonus points for being able to throw it in the slow cooker! The leftover chicken is great on a salad for lunches, too.
Tuesday
Loaded Sweet Potatoes + Peas – Similar to nachos but without the guilt! I like to make mine with ground turkey sausage for a little extra flavor, but you can use regular ground turkey or even chicken.
Wednesday
Turkey Sausage Sheet Pan with Roasted Potatoes + Green Beans – This is one of the easiest dinner recipes since it requires just one pan. Also, simple is always best when it comes to kids!
Thursday
Spaghetti with Zoodles – My girls love spaghetti but we don’t have it very often since we don’t typically eat pasta. This time, I’m pairing it with zoodles, but it’s also great with spaghetti squash!
Friday
Cauliflower Crust Pizza – Still loving the cauliflower crust and I don’t miss ‘regular’ pizza at all! It’s nice because it’s so much lighter and I don’t feel lethargic after eating dinner.
Meal prep idea: We also made Pork Chops with Apples and Greens for dinner last night with pork from Costco, so we have plenty of leftovers for lunches this week – I just doubled my recipe to make it work for the extra pork chops.
