Happy Monday! I hope y’all had a wonderful weekend – the weather was gorgeous here so we spent a lot of time outside enjoying the sun! I’ve been really into veggies and grilling the past few weeks, so we’ve been mixing up our clean eating meal plan ideas and trying out some old favorites we haven’t made in a while. One of my recent favorites is fish tacos (or taco salad, in my case!) – we don’t eat a lot of seafood here because we’ve been spoiled by the really fresh stuff back on the East Coast…so we usually wait until we visit the beach. But, the few times we’ve gotten fish recently, it’s been so good – so we’ve made fish tacos a part of the summer rotation! Anyone else love fresh seafood?
Here’s this week’s clean eating meal plan:
Grilled Pork Medallions, Veggie Skewers + Cilantro-Lime Riced Cauliflower – We will buy a pork tenderloin and simply cut it into thin slices and grill. So good!
Whole30 Egg Roll in a Bowl, Roasted Carrots + Peas – One of my absolute favorites and so simple!
Coconut Lime Chicken, Roasted Potatoes + Broccoli – We haven’t made this in a while, but it’s one of my favorite Whole30/Paleo recipes and I always wish we made it more often.
Pizza – Still using my cauliflower crust recipe!
