We have a busy week ahead – Blair is finally old enough to attend Vacation Bible School, so I’ll be doing a lot of driving this week for drop-offs and pick-ups! My goal was to keep this week’s clean eating meal plan simple and quick, since we’ll be out and about more than usual, so I have several slow cooker recipes in the lineup. Unfortunately, my Crock-Pot bit the dust over the weekend (after Father’s Day brunch, thankfully!) so it looks like I’m going to need to make an urgent Target run to grab a new one. Who else can’t survive without a slow cooker?! Just me? I literally don’t know what I’d do without it.
Here’s what our clean eating meal plan looks like this week:
Monday
Sweet Chili Chicken, Riced Cauliflower + Stir Fry Veggies – This was supposed to be a slow cooker recipe, but I’ll improvise this time and cook the chicken in a skillet!
Tuesday
Pulled Pork BBQ, Roasted Sweet Potatoes + Green Beans – This is one of my favorite slow cooker recipes because we have leftovers for days…and it’s so good on a salad!
Wednesday
Turkey Chili, Roasted Cauliflower + Baked Potatoes – I always forget about chili when it gets warm out, but it’s a simple and healthy recipe so I don’t mind it from time to time.
Thursday
Coconut Lime Chicken, Homemade French Fries + Broccoli – I had this scheduled for last week and never got around to it, but it’s one of my favorite chicken recipes. FYI – I prefer to cut up the chicken in pieces before cooking.
Friday
Pizza – Using my cauliflower pizza crust recipe, of course. Still loving it and how light it is compared to regular pizza dough.
