Happy Monday! I can’t believe we’re already at the end of June – time is flying by. Not gonna lie, we’ve had some crazy days and haven’t followed a schedule very well lately, so it’s been hard to keep up with my clean eating meal plan. But that doesn’t mean we’ve been eating unhealthily – there’s just been more breakfast for dinner or a bowl of protein oatmeal here and there (like last night). My goal is to stay on track with our meal plan this week and put my brand new Crock Pot to use (I missed having one last week while I waited for the new one to arrive! #firstworldprobs).
Here is this week’s clean eating meal plan:
Turkey Sausage, Apple, Sweet Potato Sheet Pan + Green Beans – A slightly different take on one of my fave sheet pan recipes!
Spaghetti with Zoodles – Well, I’ll be having zoodles, but everyone else will eat real spaghetti because I haven’t been able to convert them 😉
Paleo Chicken Fajita Bowls + Broccoli – I just prep salsa chicken in the slow cooker and layer it over Mexican cauliflower rice, avocado and salsa in a bowl…so good!
Loaded Sweet Potato Nachos + Peas – This is such an easy dinner and the kids love it, too!
Pizza – Made using my cauliflower pizza crust recipe…it’s so good!
