Happy Monday! I can’t believe it’s already July – crazy how time flies. But I am really excited for the 4th and the fact that vacation begins at the end of next week, so I’m not complaining! I’ve been a little burned out on meal planning and cooking to be honest, I think because we don’t have as much of a routine in the summer (which is not always a bad thing!) and I’m a little busier with both girls since school is out. 🙂
That doesn’t mean we haven’t been eating mostly healthy, though, because we definitely have – even though some nights are protein oatmeal for us and PBJs for the girls. Also, like I mentioned in my post about getting healthy before vacation, I’ve been having protein smoothies for lunch so I haven’t had to meal prep lunches the past few weeks (yay!). I kept this week’s clean eating meal plan pretty simple but tried to add in some dinners we haven’t had lately. Check it out below!
Clean Eating Meal Plan for the Week
Slow Cooker Hawaiian Chicken, Cauliflower Rice + Teriyaki Green Beans – This is one of my favorite chicken recipes and it pairs so well with cauliflower rice or quinoa.
Black Bean Burgers, Baked Sweet Potato Fries + Broccoli – It’s been so long since we’ve done black bean burgers, but they’re so good and I don’t mind a meatless dinner from time to time! Since I don’t eat grains, we’ll either use almond flour or ground oats instead of bread crumbs in this recipe.
Shrimp Tacos with Mexican Black Bean + Corn Salad – My husband and the girls love tacos, while I usually eat my shrimp over a salad with plantain chips to make it Paleo-friendly.
Coconut Curry Meatballs, Roasted Potatoes + Peas – Instead of ground chicken, I usually just use ground turkey since we always have that on hand.
Pizza – Still loving this cauliflower pizza crust!
