Happiest Monday, y’all! I’m actually excited for the start of a new week because that means vacation is almost here…which also means I have a lot to do. Luckily, I pulled together some of my favorite simple and healthy recipes for this week’s clean eating meal plan so we can still sit down together and have dinner despite how crazy this week will be!
To make things even easier, I was able to try Instacart over the weekend to have our groceries delivered so we didn’t even have to go to the store – stay tuned for later in the week because I will have a promo code for you guys on my Instagram and I plan to write a blog post reviewing my experience, too. I know I had been super curious about how it worked and if it’s worth it, so I’m sure others are, too!
Clean Eating Meal Plan for the Week
Slow Cooker Buffalo Chicken, Roasted Sweet Potatoes + Broccoli – We haven’t made this in forever but it’s so good! Also, one of my favorite tricks is to cook something in the slow cooker that will have leftovers for lunches a few days in the week.
Whole30 Egg Roll in a Bowl, Roasted Carrots + Green Beans – If you’ve considered trying Whole30, make sure this recipe is on your list! Not only is it super easy but it has so much flavor.
Turkey Sausage, Spinach + Riced Cauliflower Skillet – This one is quick, easy and healthy. It’s a good one if you’re going for low-carb, too, but I personally like to add sauteed apples to the dish.
Breakfast for Dinner – This typically consists of Paleo pancakes, turkey sausage, scrambled eggs and fruit.
Pizza – Using my cauliflower pizza crust recipe.
