Happy Monday! This weekend flew by with not one but two birthday celebrations – for my daughter and husband (they share a birthday!). We had a great time and it was nice to catch up with family and friends, but now I feel like I need a nap. Here’s to hoping that extra cup of coffee will keep me going the rest of the day. 😉 I was actually so busy I didn’t get a chance to put together our clean eating meal plan for the week until last night. Fortunately, I grabbed a few things at our new Trader Joe’s (which opened last week) so meal prep should be easy this week!
Here is this week’s clean eating meal plan:
Chicken Sausage, Riced Cauliflower + Spinach Skillet – It’s been a few weeks since we’ve made this, but I grabbed some apple chicken sausage at TJs and it’s such an easy dish!
Coconut Curry Meatballs, Roasted Potatoes + Green Beans – The girls actually love these meatballs and they are Paleo/Whole30, so it’s a win-win for all of us.
Slow Cooker Buffalo Chicken, Riced Cauliflower + Asparagus – I’ve been really into spicy foods lately and this buffalo chicken doesn’t disappoint.
Twice Baked Sweet Potatoes + Peas – I usually make these with ground turkey, but I think I’m going to use turkey sausage this time to change it up!
Cauliflower Pizza – I finally got one of the highly sought-after Trader Joe’s cauliflower pizza crusts and I’m excited to try it this week. I still love my cauliflower pizza crust recipe, but having these frozen crusts on hand will be great for busy nights!
