Happy Monday, friends! We’re coming off a rainy, cool weekend – it was nice to take it easy and not have too many things planned. And this amazing weather has me thinking about all things Fall! I heard our local pumpkin patch is opening up this coming weekend, so it looks like we’ll be making a trip out there soon. I’ve been trying to add more cool weather favorites to our clean eating meal plan, too, since it’s finally fall-like (at least for a few days).

Clean Eating Meal Plan for the Week
Monday
Slow Cooker Hawaiian Chicken, Riced Cauliflower + Broccoli – I’m taking a Pure Reform class this night, so I’ll throw dinner in the crockpot and it’ll be ready when I’m home. Also, I’ve been putting red pepper flakes and ginger on broccoli before baking when we have Asian-themed dinners and it’s so good!
Tuesday
Ground Turkey Spaghetti – I picked up frozen zucchini noodles at Trader Joe’s for me and the girls and my husband prefer to eat regular pasta.
Wednesday
BBQ Chicken Casserole – This is one of my husband’s favorite dinners, and it’s super easy to prep (especially if you already have your chicken prepped – I’ll make enough for Monday night’s dinner to have leftovers).
Thursday
Turkey Sausage Sheet Pan – Another super easy dinner that takes MAYBE 40 minutes total, from chopping the potatoes to sitting at the table to eat.
Friday
Cauliflower Crust Pizza – I tried Trader Joe’s cauliflower pizza crust and I’ll be honest, it didn’t wow me. I really like my cauliflower crust (and the fact that it is higher in protein), so I’ll probably stick with making my own most of the time and keep a TJ’s crust on hand for nights we’re busier.
