Happy Monday, friends! It feels like the past week went by in a blink, but I suspect this week will seem a bit longer since my girls are on fall break. 😉 I didn’t do the greatest job staying on track with our clean eating meal plan last week (though we still ate healthily!), so some of the recipes on this week’s menu are carried over from last week.
It looks like the weather may finally cool down and stay cool this week, which means I’ll hopefully be adding a lot more healthy comfort foods to the weekly clean eating meal plan from now on!
This Week’s Clean Eating Meal Plan
Slow Cooker Salsa Verde Chicken, Cilantro Lime Cauliflower Rice + Broccoli – One of my favorite easy dinners and so versatile – we usually eat with cauliflower rice but it also works great for tacos, enchiladas or salads.
Turkey Apple Meatballs, Roasted Cauliflower + Peas – This is a yummy fall recipe that brings all the cozy feels. I also love making mashed cauliflower with this!
Pineapple Teriyaki Chicken + Fried Rice with Green Beans – This was on my list for last week but we didn’t get around to it. I plan to make my teriyaki chicken in the slow cooker and prep the “fried” rice separately.
Slow Cooker Sweet Potato Chili – Another great fall recipe and it makes a lot, so you could freeze some for later!
Cauliflower Crust Pizza – I tried Trader Joe’s Butternut Squash crust last week and it was really good, as long as you like the taste of butternut squash. I’ll be honest, though, my homemade cauliflower crust pizza is still my favorite and it’s worth the extra 10-15 minutes to prep it myself!
