Happy Monday, y’all! It’s been a while since I’ve shared a weekly meal plan and to be honest, it’s because I haven’t done a whole lot of meal planning around here since before Thanksgiving! But I’m hopping back into the swing of things this week and trying to keep us on track and organized in December since it’s already a crazy busy month – having dinners planned will make things just a little bit easier!
I had a poll over on Instagram Stories earlier in the month asking when you do your shopping, how many grocery trips per week do you make and whether or not you meal plan. A huge number of you said YES, you meal plan(!) and you only make one grocery store trip per week – but when you actually do your shopping varied greatly! I was trying to decide the best day to actually share my weekly meal plan based on that response, but since it was all across the board, I didn’t get a definitive answer. 😉

For now, I think I’ll continue sharing it on Mondays, but if you have any feedback re: the best post day, feel free to leave a comment!
Clean Eating Meal Plan for the Week
Monday
Slow Cooker Maple Mustard Chicken, Roasted Potatoes + Broccoli – This is the first time I’ve tried this recipe (I opted to make mine in the Crock Pot instead of a skillet FYI), but it’s similar to the honey mustard chicken I’ve made in the past!
Tuesday
Paleo Asian Meatloaf, Mashed Cauliflower + Green Beans – My husband actually loves meatloaf, but I always forget to add it to our meal plan – this one is a good way to change up the traditional recipe!
Wednesday
Slow Cooker Sausage, Spinach + White Bean Soup – We made this several weeks ago and it was a favorite – I added two chicken breasts to mine and shredded them into the soup once cooked for additional protein!
Thursday
Ground Turkey Spaghetti + Zoodles – I think the girls would eat spaghetti every day if we let them – this is one meal no one will fight about! The kids and my husband eat regular pasta and I like either zucchini noodles or carrot spirals (Trader Joe’s has these in the frozen section).
Friday
Cauliflower Crust Pizza – In addition to failing to meal plan the past few weeks, we also haven’t had our Friday night pizza tradition in a while!
