Happy Monday! Can you believe we’re only 15 days away from Christmas? Wow, time sure has flown by! We’ve been trying to really enjoy the season over here with fun activities, events and of course, baking sweet treats. One of the things I really like to do this time of year is stay on track with my clean eating meal plan during the week, so we have a little room to indulge on the weekends and at holiday events. I just feel so much better when I’m following the 80/20 rule – and I could always use the extra energy around this busy time of year!
Clean Eating Meal Plan for the Week
Slow Cooker Buffalo Chicken, Baked Sweet Potatoes + Roasted Broccoli – This is one of my fave cold weather recipes and you can’t go wrong with a slow cooker recipe!
Coconut Curry Meatballs, Mashed Cauliflower + Peas – Another favorite around here – even the girls love these meatballs!
Turkey Sausage, Cauliflower Rice, Spinach + Apple Skillet – We’ve made this a few times and it couldn’t be an easier weeknight dinner – literally throw everything into a single pan!
Whole30 Orange Chicken, Brown Rice + Teriyaki Green Beans – My husband loves Chinese food but I don’t love how unhealthy it is, so we tend to compromise and I find a healthier, but still delicious, recipe to use!
Cauliflower Crust Pizza – Pizza night keeps getting pushed to Saturday or Sunday nights lately since Fridays have been busier, but hopefully we can stay on track this week.
