Happy Monday! It’s officially one week until Christmas Eve – I just can’t believe how quickly this month has flown by! I’m hoping to slow down and savor this last full week of pre-Christmas fun since the girls are officially out of preschool until after New Years. I have a little bit of shopping left to do – let’s be real, online shopping – and planning our Christmas menu for next week. We’ve been baking lots of sweets over here lately, so I’ve been really glad to have my clean eating meal plan ready to go for busy weeknights to stay on track and eat more nutritiously balanced meals than just cookies! 😉

Paleo Egg Roll in a Bowl + Teriyaki Green Beans – My fave easy recipe – perfect for a busy Monday night!
Slow Cooker White Chicken Chili – We haven’t made this in ages, but it has a great flavor and is perfect for a cold day!
Turkey Sausage Sheet Pan – Simple, quick and makes the kids happy, too.
Ground Turkey Shepherd’s Pie – I always forget how good Sheperd’s Pie is until we make it – so great for the winter months.
Cauliflower Crust Pizza – I’ve been alternating between my favorite homemade cauliflower pizza crust and the Trader Joe’s version for a quick dinner.
