Happy Friday, friends! Coming to you this week with my first clean eating meal plan of the new year AND on a new day! In a poll I did on Instastories a few months ago, you guys were really split down the middle on whether you grocery shop at the beginning or end of the week. I have traditionally shared my meal plans on Mondays, but in reality, I usually create the meal plan the Thursday beforehand and shop on the weekend for all of my groceries. So, I thought I would start sharing my meal plan on Fridays, and hopefully, that will give you some dinner inspiration for the week ahead!
Clean Eating Meal Plan for the Week
Egg Roll in a Bowl + Roasted Carrots – This is one of my favorite easy dinners, it’s perfect for a Monday to ease back into the week. We also have a ton of carrots that need to be used, so I will roast a pan of them to go with dinner.
Spinach, Sausage + White Bean Soup – I add 1-2 pieces of chicken to mine (chop/shred once cooked) for extra protein! This soup is so good and perfect for a cold night.
Pork Chops with Apples + Greens – I made up this recipe last year and this is something I actually crave – it’s so good!
Maple Mustard Chicken, Riced Cauliflower + Broccoli – If it can be made in the slow cooker, I’m sold. We made this a few months ago and I’ve been wanting to add it to the menu again.
Cauliflower Crust Pizza – I’ll be honest, we’ve been buying Trader Joe’s cauliflower crusts a lot more often these days, just because it saves so much time! But my cauliflower crust recipe is still by far my favorite and I highly recommend giving it a try.
