Happy Friday! How do you guys like meal plans on Fridays?! I feel like it flows better for me personally since I do my grocery shopping (let’s be real, grocery pickup) on Saturdays. I’m really excited to get back into a clean eating meal plan groove in the new year and I’m feeling inspired to try some new recipes. In this edition, I’m really looking forward to trying a new-t0-me recipe by 40Aprons – she has some amazing Whole30/Paleo recipe ideas!
Clean Eating Meal Plan for the Week
Pesto Chicken + Baked Sweet Potatoes – I buy the vegan pesto from Trader Joe’s since I don’t eat dairy (it makes me sad that almost every pesto has cheese – it’s my favorite). This recipe is so simple – literally pour the pesto over chicken and use Carolina Charm’s slow cooker hack to cook the sweet potatoes on the other side!
Taco Bowls – One of my friends came over a few months ago and cooked lunch for us – the most simple meal that turned out amazing! It was just ground beef over brown rice with diced tomatoes + avocado. Basically, a taco bowl, so that’s what I’m aiming for!
Slow Cooker Chicken Pot Pie Soup – This is the 40Aprons dish that I’ve been eyeing ever since I got an email with the recipe! I think I may omit the cashews, since we don’t really eat a lot of those but hopefully the coconut milk will still give it the creaminess factor.
Sweet Potato Chili – This is one of my favorite chili recipes and we don’t make it often enough! This cold weather has me wanting all the soup.
