Happy Friday! This week sure did fly by – but luckily we had a few days of warmer weather earlier in the week that cheered everyone up around here. Unfortunately, it’s cold again, but hopefully spring will come back soon and stick around! This week was also my first official week of the Faster Way to Fat Loss program, so it has been interesting making sure I’m eating enough of the right macronutrients each day. I love this program because it doesn’t really change our clean eating meal plan favorites – I just have to make sure I’m consuming the right amount carbs and fats at all meals throughout the day. On this week’s menu are several favorites along with some newer recipes I’m looking forward to trying.

Clean Eating Meal Plan for the Week
Monday
Basil Pesto Chicken with Spaghetti Squash “Pasta” – I typically make this pesto chicken with baked sweet potatoes, but since this is a “low carb” day for FWTFL, I’ll use spaghetti squash as pasta.
Tuesday
Turkey Meatballs with Mashed Cauliflower – We haven’t done meatballs in a few weeks, but the girls actually enjoy these, so it’s a great dinner idea around here. Also, mashed cauliflower really does taste like potatoes to me and this is perfect for another low carb dinner!
Wednesday
Lemon Chicken with Banza Chickpea Pasta – Lemon chicken pasta is one of my favorite dishes and I generally eat it for special occasions. The Banza team was so generous to send me several of their pastas to try, so I’m going to recreate my favorite lemon chicken pasta using their high protein chickpea pasta.
Thursday
Paleo Sweet Potato Chili – This is such a simple, easy dinner and it’s delicious. Just throw everything in the slow cooker early in the day and let it simmer for 4-6 hours!
Friday
Cauliflower Crust Pizza – I purposefully didn’t buy a cauliflower crust at Trader Joe’s this week because I want to make my own crust this week. Basically, if I have a premade crust in the freezer, I’m going to use it, so this will force me to make one from scratch (it’s so much better, too)!
