Happy Friday! I woke up and realized I never got around to drafting up this clean eating meal plan post yesterday, so here we are – sorry it’s coming to you late today! It’s been a thoroughly exhausting week over here, but I’m sure most of that can be attributed to pregnancy. 🙂 It does sound like it’s finally going to warm up for good over here, so I’ve been adding more fresh veggies to the dinner mix and hopefully we’ll be able to grill a few times this week!
Clean Eating Meal Plan for the Week
Slow Cooker Basil Pesto Chicken with Cauliflower Gnocchi – Trader Joe’s vegan pesto is my favorite to have on hand for a quick dinner – all you do is put it over top of chicken in the slow cooker and let it cook for 4 hours on high!
Turkey Sausage, Apple, Spinach + Riced Cauliflower Skillet – We haven’t done this one in a while, but it’s a delicious combo of sweet and savory.
Jalapeno Turkey Burgers + Baked Fries – I was inspired by the warm weather for this one! We’ve been wanting to grill, so hopefully we have a good day with no rain to make these yummy burgers.
Slow Cooker Buffalo Chicken + Baked Sweet Potatoes – I loved hot sauce before pregnancy, but I really crave the flavor now, so this chicken sounded so good. Plus, topping the sweet potato with the spicy chicken has a delicious flavor.
