Happy Good Friday, friends – it feels like Easter snuck up on us, even though it’s super late this year – though I think that may be what’s throwing me off! It sounds like we’re supposed to have clear skies and warm weather for Easter weekend – I hope you do, too! Looking forward to a delicious Easter meal, though I haven’t quite nailed down our menu – it will probably include some of these dairy-free and gluten-free recipes we made at Thanksgiving.
If I’m being honest, I’ve been feeling pretty burned out on clean eating meal plan ideas we’ve had before, so I’ve been trying to come up with some new recipes to try…especially more fresh foods since the weather has warmed up so much!
Clean Eating Meal Plan for the Week
Hawaiian Chicken Burgers and Sauteed Zucchini – I love the combo of chicken and pineapple and thought this would be a yummy dinner to grill!
Gluten-Free, Dairy-Free Enchiladas – This recipe technically isn’t dairy-free, but I’ll put my Daiya ‘cheese’ on my portion and regular cheese on the rest for everyone else.
Whole30 Chick-Fil-A Nuggets + Homemade French Fries – I think we can all agree that Chick-Fil-A makes the whole family happy to eat dinner, but I love that this is a cleaner version that’s Whole30 approved – looking forward to giving it a try!
Paleo Pancakes, Turkey Sausage and Eggs – We used to do this pretty often, but it’s been a while since we’ve done breakfast for dinner, so I thought it was a perfect, simple dinner for this week.
Cauliflower Crust Pizza – Planning to make my own crust this week – it really does taste better!
