Happy Friday! The past few weeks have felt so slow, yet have actually gone by so fast – how does that happen?! I’m really starting to *feel* very pregnant (you can read my latest bumpdate here!) so everything has gotten a bit more challenging, from working out to cleaning the house to finding the motivation to cook dinner. To be honest, I haven’t really craved much in terms of food the past few weeks – my belly just feels so full and stretched tightly already…and I still have 15 weeks to go! We have been eating a lot more summery foods, like grilled burgers and kabobs and fresh veggies and I don’t plan on stopping anytime soon!
Clean Eating Meal Plan for the Week
Salsa Chicken + Mexican Cauliflower Rice – We haven’t done salsa chicken lately – I love topping spicy cauliflower rice with shredded chicken, cilantro, and hummus…so good!
Coconut Curry Meatballs, Mashed Cauliflower + Peas – My girls will actually eat meatballs (well, usually…), so I try to do a variation of these every so often.
Lemon Chicken Protein Pasta + Roasted Green Beans – I have a box of Banza chickpea pasta in the pantry and thought it would be the perfect excuse to make my absolute favorite dinner!
Thai Turkey Burgers, Corn on the Cob + Broccoli – Hoping the weather is good so we can grill out – this is the perfect warm weather meal!
Cauliflower Crust Pizza – We actually haven’t made pizza in a while, so looking forward to it this week.
