Happy Friday, y’all! I hope you had a great week – to be honest, the past few weeks have been a blur around here with the home selling process! I’ve been making an effort to keep up with the blog through all of the chaos but I may have to take a little breather next week while we’re wrapping things up. My mom will be in town to help us with the girls and packing, and I’m trying to keep our clean eating meal plan simple since we’re going to be busy!
Clean Eating Meal Plan for the Week
Egg Roll in a Bowl – We actually had this on the menu last week but didn’t get around to it, so I already have all of the ingredients to make this.
Ground Turkey Spaghetti – This is my oldest’s favorite meal and she’s been begging for it the past few weeks – I really can’t complain because it’s super easy! I usually grab zucchini or carrot noodles from Trader Joe’s for myself and everyone else eats regular wheat pasta.
Lemon Chicken Pasta – I will use Banza chickpea pasta for this to amp up the protein! It’s one of my favorite recipes and we don’t make it often enough.
Sweet Potato Nachos – Another easy recipe that tastes so good. We’ve been on a sweet potato kick lately, too!
