
Happy Monday! I can’t believe we’re almost at the end of October – Halloween is just around the corner. And then it’s on to Thanksgiving and Christmas…which I’m super excited about in our new home! I’ve barely had time to think about all of that, though, and *I’m* still working on following my clean eating meal plan – it’s been a work in progress ever since life got a little crazy earlier in the year, but I do love the nights I actually follow through and cook the dinner I planned out! It makes our nights run so much more smoothly.
This Week’s Clean Eating Meal Plan
Monday

Slow Cooker Pesto Chicken + Roasted Spaghetti Squash – I love Trader Joe’s for lots of things, one of which is their selection of dairy-free foods…like their vegan pesto! This meal is super easy, just put chicken and a container of pesto in the crockpot for 4 hours on high.
Tuesday

Turkey Meatballs, Mashed Cauliflower + Peas – We haven’t done meatballs in ages, but my girls actually like them, so it makes dinner fuss-free (well, mostly!).
Wednesday

Sausage, Potato + Broccoli Sheet Pan – This is one of my favorite EASY dinners – just chop everything up and throw it on a sheet pan and pop in the oven!
Thursday

Slow Cooker Sweet Potato Chili – We make several types of chili around here, but this is one of my favorite variations!
Friday

Pizza – Loving TJ’s Butternut Squash crust but also like my homemade cauliflower crust from time to time.
