Yep, its as good as it sounds. Peanut butter combined with chocolate…minimal ingredients…and best of all, gluten-free. Sure, not everyone is intolerant to foods that contain gluten, but missing out on a little bit of gluten never hurt anyone. Not only that, but these cookies are so good and rich without all the extra things like flour and butter…and that makes them that much healthier too!

- 1 cup peanut butter (I didn’t have any natural PB, so I used JIF)
- 2/3 cup white sugar
- 1/3 cup light brown sugar
- 2 large egg whites
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
1. Preheat oven to 325˚.
2. Stir together all ingredients except chocolate chips.
3. Stir in chocolate chips once dough is mixed together.
4. Drop dough by tablespoon onto cookie sheet lined with parchment paper, about 2″ apart.
5. Bake for 12-14 minutes.
