Now that we’re headed into back to school season, I’ve been trying to think of some fun snack ideas for my girls that can either be packed in their lunchboxes or enjoyed in the afternoon at home. While they can easily eat the same foods on repeat, I like to incorporate some variety and make sure they’re eating enough protein, fruit and veggies each day – which is easier said than done!
One of our go-to sources for protein is peanut butter – my girls aren’t huge meat eaters anyways, so we compromise often with PB. I love how versatile it is as a snack or even with breakfast and lunch – we do lots of waffles with peanut butter and fruit for breakfast and the occasional peanut butter sandwich for a quick lunch! So naturally, when I was thinking of fun snack ideas for the girls, I came up with a fun twist to a snack I enjoyed as a kid: peanut butter and apples. I used to eat apple slices with peanut butter, but to make it more fun for the kids, I opted to core my apples and cut them into rings that could be spread with peanut butter and decorated with yummy toppings.
This looks yummy! We can’t have PB anymore but I’ll definitely try this snack for M with almond butter. And totally agree – such a great way to sneak in protein and healthy fat for this picky eater stage of life!
I bet it would be so good with almond butter! Have you tried sunflower seed butter? That’s pretty yummy too!
