Now that we’re headed into back to school season, I’ve been trying to think of some fun snack ideas for my girls that can either be packed in their lunchboxes or enjoyed in the afternoon at home. While they can easily eat the same foods on repeat, I like to incorporate some variety and make sure they’re eating enough protein, fruit and veggies each day – which is easier said than done!
One of our go-to sources for protein is peanut butter – my girls aren’t huge meat eaters anyways, so we compromise often with PB. I love how versatile it is as a snack or even with breakfast and lunch – we do lots of waffles with peanut butter and fruit for breakfast and the occasional peanut butter sandwich for a quick lunch! So naturally, when I was thinking of fun snack ideas for the girls, I came up with a fun twist to a snack I enjoyed as a kid: peanut butter and apples. I used to eat apple slices with peanut butter, but to make it more fun for the kids, I opted to core my apples and cut them into rings that could be spread with peanut butter and decorated with yummy toppings.

Apple Rings with Peanut Butter – Fun Snack Ideas to Make with Kids
- 2 apples, cored and sliced into rings
- 2 Windstone Farms Peanut Butter Packets
- Dried cranberries
- Chocolate chips
- Coconut flakes
- Cereal or granola
- Wash apples, then core and slice into 1/4-1/2" thick rings.
- Squeeze a generous amount of a Windstone Farms Peanut Butter Packet on each ring (optional: spread evenly with a knife).
- Top each peanut butter covered slice with toppings of your choice. Let the kids help!
This is such an easy snack that your kids will love making!
