Happy Monday! I totally skipped out on last week’s meal plan and didn’t even realize it until later in the week – oops! It was a bit of a busy week with Halloween, so I’ll blame it on that. 🙂 I’m back this week with a new clean eating meal plan for the week, albeit a little bit late in the day!

Clean Eating Meal Plan for the Week
Monday

Slow Cooker Roasted Chicken, Cauliflower Rice + Broccoli – I picked up a few whole chickens at BJ’s over the weekend and I love popping one into the crockpot with spices, lemon and Earth Balance “butter” for an easy dinner. It’s also nice to have leftovers to make chicken salad, etc.!
Tuesday

Sausage, Spinach + Cauliflower Gnocchi Skillet – This is an easy one-pan dinner that I love! Cauliflower gnocchi is my fave.
Wednesday

Ground Turkey Enchiladas – I picked up a bottle of Trader Joe’s Enchilada Sauce for these. I just brown ground turkey with beans and sauteed spinach to roll up in tortillas, pour on enchilada sauce, cheese (and dairy-free cheese for me) and bake for 15 mins on 375 degrees.
Thursday

BBQ Chicken Casserole – Easily my husband’s favorite dinner. I also like to saute mushrooms and add to this dish if I have them on hand!
Friday

Pizza – We’ve been trying to do pizza and movie nights on Friday when we can! I love this cauliflower crust, or a butternut squash crust from TJ’s!
