Happy Monday, y’all! I️ admit that I️ keep falling off the bandwagon with my weekly meal plan, but I️’m trying to make a conscious effort in 2020 because it makes life so much easier AND we don’t waste food when there’s a plan in place! Last year, I️ tried to move this post to Fridays, but it just didn’t work well for me, so I️’m bringing it back at the beginning of the week, aka #mealplanmonday!
When it comes to meal planning, I️’m always somewhere between finding convenient (but healthy) recipes and pulling a new recipe out of a cookbook to try. I️ love cooking but weeknights can get crazy, especially since I️ go to Pure Barre or Burn Boot Camp most nights when my husband gets home from work. I️f you’ve been here a while, you probably know I love my slow cooker and will often find recipes that can be prepared that way!
This Week’s Clean Eating Meal Plan
Ground Turkey Spaghetti – I️ try to avoid gluten, so I️ always make myself either zoodles, carrot spirals or Banza pasta to go with mine.
Tofu Stir Fry + Brown Rice – Obviously, the girls won’t eat this! My husband and I️ used to be good about incorporating a meatless dinner into our week, so we’re giving it another go this year.
Chicken Enchiladas – Something I️’m aiming to be better at in 2020 is meal prep and making things that can be used for more than one dinner. For these enchiladas, I️ plan to use leftover salsa chicken from the night before – makes it super easy to pull this dish together!
Cauliflower Crust Pizza – We love having a pizza night tradition on Fridays, though I️ admit it doesn’t always happen! This past week, I️ prepped all of the toppings before my husband got home and then he was able to dive directly into making the crust. That saved a ton of time and allowed us to enjoy pizza night and still get the girls to bed (relatively) on time!
