Meal Plan Monday #10 | Clean Eating Dinner Ideas

Happy Monday! I️’m catching up after a busy weekend of home projects – we finished the office finally and even painted the laundry room while we were in the painting mood. I️ just ordered some office organization from The Container Store and once it’s all set up, I️’ll share the entire room reveal! Also, I️ keep seeing fun laundry room decor and lots of people using peel and stick wallpaper to add a little something to the room. Our laundry room is pretty small but I️’m thinking about using the wallpaper as an accent on one of the walls, just to give it a little more flair. All of this extra time on my hands is keeping me busy with home ideas….and my husband is probably at the point of rolling his eyes every time I️ mention something new I️ want to do! Anyways, I️ am super late with this week’s meal plan, but wanted to share it just in case you need some ideas 🙂

This Week’s Clean Eating Meal Plan

Monday

Hawaiian Chicken Burgers – The weather looks nice tonight, so we’ll most likely grill these and bake some fries and a veggie to go along with the burgers!

Tuesday

Blackened Salmon

Blackened Salmon, Roasted Potatoes + Broccoli – We made this blackened salmon a while back and it was so good! It’s definitely my favorite way to enjoy salmon.

Wednesday

Healthy Lemon Chicken Pasta Recipe | Gluten-free and Dairy-free

Lemon Chicken Pasta + Peas – This is one of my all-time favorite recipes and I️ had all of the ingredients on hand this week, so I️ figured I️’d add it to the menu.

Thursday

Sausage and Cauliflower Gnocchi Skillet Recipe

Turkey Sausage, Spinach + Cauliflower Gnocchi Skillet – We haven’t made this in a long time, but it’s so easy and tastes great!

Friday

Cauliflower Crust Pizza – I️ might do BBQ Chicken Pizza this week, since we haven’t done that in a while.

A little glimpse of what’s most important in lif A little glimpse of what’s most important in life - family, togetherness, snuggles ❤️ I’ll be honest and say that running a business takes a lot out of you, and some days I question whether it’s worth it. There is another business that has been out to get me since I started, and yesterday they tried to win. I all but gave up yesterday. It just didn’t feel worth it to put up a fight when I could go back to my ‘old’ life of being a mom, blogger, and freelance writer (all 3 of which I’ve sucked at since starting my charcuterie biz). I felt guilty for spending 6 months of my life growing a business and then letting it fall apart. I felt guilty for all the time spent away from my family because I was so busy and could barely keep up. And then I remembered why I was so busy, it’s because people appreciate my work and love what I do. I built a brand that people respect and all of that hard work is most definitely worth it when I see how far I’ve come in the past 6 months. This is a reminder for all of us to never give up and never let the enemy win. ❤️

Slowly getting back to normal over here after the Slowly getting back to normal over here after the holidays, but not gonna lie, it’s been a rough week 🥴 Between getting back into the swing of early wake ups for school, a teething baby who hasn’t felt well all week, whatever is happening with our country these days, plus doing a veggie cleanse and not having full energy....let’s just say, I’m looking forward to better, brighter days 😆 How’s your first week back after the holiday break? Happy NYE, friends! It certainly has been an inter Happy NYE, friends! It certainly has been an interesting year, but I can’t say that 2020 was all that bad for us.
