Meal Plan Monday #11 | Clean Eating Dinner Ideas

Happy Monday! It’s been a few weeks since I️ last shared a weekly meal plan, and we haven’t done a great job of actually planning any dinner ideas over here lately. I️ want to get back on track because it’s extremely helpful to have a plan, and we’re all better for it. I️ haven’t had any trouble finding things at the grocery store lately, so that makes meal planning a LOT easier!

Clean Eating Meal Plan for the Week

Monday

General Tso Tofu, Brown Rice + Broccoli – I️’ve been trying to incorporate more #MeatlessMonday ideas and since General Tso sauce is my husband’s favorite, I️ figured I️ could convince him to eat it on tofu!

Tuesday

Ground-beef-taco-bowls-retake-three

Taco Bowls – We’ve been doing Taco Tuesdays for several weeks now and we may never go back. Tacos are the one food that everyone can agree on, so it’s nice to have a peaceful dinner!

Wednesday

Blackened Salmon

Blackened Salmon, Sweet Potatoes + Broccoli – I️ actually really like blackened salmon – it’s the best way to eat it, in my opinion. The girls won’t eat this, so we’ll have to make them something different (they usually eat what we eat for dinner).

Thursday

Grilled Chicken Kabobs + Roasted Potatoes – One of the best parts about warm weather is grilling. I️ love putting chicken and fresh veggies on the grill for a healthy dinner.

Friday

Cauliflower Crust Pizza – We did takeout pizza last week, which the girls loved – but I️’m excited for my homemade cauliflower pizza again this week (it’s so much better, in my opinion!).

A little glimpse of what’s most important in lif A little glimpse of what’s most important in life - family, togetherness, snuggles ❤️ I’ll be honest and say that running a business takes a lot out of you, and some days I question whether it’s worth it. There is another business that has been out to get me since I started, and yesterday they tried to win. I all but gave up yesterday. It just didn’t feel worth it to put up a fight when I could go back to my ‘old’ life of being a mom, blogger, and freelance writer (all 3 of which I’ve sucked at since starting my charcuterie biz). I felt guilty for spending 6 months of my life growing a business and then letting it fall apart. I felt guilty for all the time spent away from my family because I was so busy and could barely keep up. And then I remembered why I was so busy, it’s because people appreciate my work and love what I do. I built a brand that people respect and all of that hard work is most definitely worth it when I see how far I’ve come in the past 6 months. This is a reminder for all of us to never give up and never let the enemy win. ❤️

Slowly getting back to normal over here after the Slowly getting back to normal over here after the holidays, but not gonna lie, it’s been a rough week 🥴 Between getting back into the swing of early wake ups for school, a teething baby who hasn’t felt well all week, whatever is happening with our country these days, plus doing a veggie cleanse and not having full energy....let’s just say, I’m looking forward to better, brighter days 😆 How’s your first week back after the holiday break? Happy NYE, friends! It certainly has been an inter Happy NYE, friends! It certainly has been an interesting year, but I can’t say that 2020 was all that bad for us. I joke about it being a ‘dumpster fire,’ but I have appreciated all of the extra time at home with my family, not feeling the pressure to always be on the go and of course, launching my business @somethingbleuclt! ✨ I hope you have time for a moment to reflect on your year and find the good moments and hold onto those memories ❤️
