I hope your Monday is off to a great start! I️’m hoping to make this week a good one. Last week was definitely an ‘off’ week over here with sickness, exhaustion and feeling overwhelmed with my to-do list, so I️’m going to try and tackle small things each day that add up throughout the week! My meal plan was very loosely followed this past week because of all the craziness, but it was still nice to have some ideas in place that we could pick from each night. I️’m looking forward to this week’s meal plan because I️’m bringing back some old favorites – plus, it’s all so easy to prep!
This Week’s Clean Eating Meal Plan
Slow Cooker Teriyaki Chicken, Broccoli + Rice – This teriyaki chicken is SO good and I️ love that it’s made with coconut aminos rather than tons of soy sauce.
Black Bean Burgers on Brioche – I️ used to always get a black bean burger from Babalu in Memphis and it was literally the best one I️’ve ever tasted. So far, I️’ve been unable to recreate the recipe, but every so often, I️ try a new recipe to see if I️’m getting closer!
Sausage, Spinach and Cauliflower Rice Skillet – This is one of the easiest recipes to pull together and it tastes so good. Anyone who says they don’t have time to cook should give this one a try!
Twice Baked Sweet Potatoes – We used to make these pretty often but I️ had honestly forgotten about them for a while! My girls actually eat ground turkey and sweet potatoes, too, so there will be less fussing at dinner time, I️ hope!
Cauliflower Crust Pizza – We’ve been doing a pretty good job of pizza Fridays and it’s a nice way to unwind…we eat in the living room (brave I know) and watch a movie together, so it’s something to look forward to all week!
