Can’t believe it’s Monday already! We were very productive this weekend and not only got all of the holiday decor put away, but I️ also organized the guest room closet…aka, the gift wrap and seasonal decor closet. I️ will be sharing about that later this week, so stay tuned! It’s crazy how a little bit of organization can make such a difference in your overall mood and optimism – I️ need to be better about doing this regularly. 🙂
We only followed our meal plan somewhat last week, so my goal is to stay on track with it this week!
This Week’s Meal Plan
Whole30 Zuppa Toscana – This is one of my go-to recipes on a cold night. Funny story, I️ ordered kale from Walmart Grocery Delivery for this recipe and we got a giant bag…of collards. Needless to say, I️ decided I️ was over it with Walmart and canceled my delivery membership. Ha!
Cauliflower Fried Rice – Love the versatility of this one – you can use rice or riced cauliflower depending on whether you prefer low-carb or not. Plus, you can make it vegetarian by skipping the addition of meat and just scrambling a few eggs into the pan.
Chicken Sausage Sheet Pan – We usually keep our fridge stocked with chicken sausage for a quick weeknight meal. Love how simple it is to throw this on a sheet pan and bake with potatoes and veggies!
Coconut Curry Meatballs – We should do meatballs more often, since my girls actually eat them. I️ still haven’t personally identified the difference between burgers and meatballs, but it makes a difference to them, so…
Cauliflower Crust Pizza – Trader Joe’s is now out of my fave butternut squash crust for the season, but they have a broccoli kale version I️ still want to try. Otherwise, it’s back to making my own yummy cauliflower pizza crust!
