Happy Monday! We’re having some absolutely gorgeous weather this week and it has me in the mood for springtime. I️’m looking forward to lots of grilling out and eating dinner on the porch in the coming weeks! We had a really productive weekend doing things around the house, but that means I️ am now so behind today on blog and freelance-related work! Coming to you with this weekly meal plan super late in the day, but better late than never, right?
Meal Plan for the Week
Cauliflower Rice Jambalaya – We haven’t done this in a long time, but it’s so good! We tend to like spicier foods, so it’s no surprise we love this recipe.
Slow Cooker Pesto Chicken + Sweet Potatoes – I️ haven’t done this in ages but it’s one of my favorite easy dinner recipes!
Ground Turkey Enchiladas – Another simple favorite that we try to do every few weeks.
Pork Tenderloin, Roasted Potatoes + Green Beans – If the weather is nice, maybe we’ll grill the tenderloin (my fave!).
Cauliflower Crust Pizza – I️ actually tried the Broccoli Kale crust from Trader Joe’s last week and really liked it! But this is my go-to cauliflower crust recipe.
