Happy Monday! I️ feel like I️’ve been pretty MIA over the past week – we planned a mini beach vacay for this weekend, so I️ spent most of last week getting the house clean, packing and prepping for Valentine’s Day for the girls. I️’m currently relaxing and sipping coffee at my parents’ beach house, but it hit me a few minutes ago that today is Monday and I️ totally haven’t meal planned! So, I️’m pulling this meal plan together as I️ go along and having my groceries delivered via Shipt tonight when we arrive home. 🙂
Meal Plan for the Week
Egg Roll in a Bowl – Literally the easiest recipe ever, everything goes into one pot and it takes a max of 30 minutes!
Slow Cooker Buffalo Chicken + Sweet Potatoes – We had buffalo shrimp over the weekend and it reminded us of this yummy recipe that we love!
Ground Turkey Quesadillas – The girls could eat their weight in quesadillas, so this is one meal I️’m confident they’ll enjoy. Here’s a dairy-free recipe that sounds good!
Whole30 Chicken Pot Pie – I️ used to make a slow cooker pot pie but it wasn’t the healthiest and it had dairy and gluten, so I️ like this version because it’s still delicious but much better for you!
Cauliflower Crust Pizza – We missed pizza night this past week because we were traveling to the beach, so we’re looking forward to it this week. I️’ve been using the broccoli and kale crust from Trader Joe’s lately, but I️ also love my homemade cauliflower crust.
