Happy Monday! Our weekend started out a bit crazy, but turned out to be pretty good by the end of it. After running some errands on Saturday, my 3-year-old got sick basically as soon as we got home and we all feared it was a stomach bug. After lots of cleaning and taking activated charcoal repeatedly, I️ am not sure if it was even a bug at all. She was better after just a few hours and has been fine since. Even so, we decided Sunday would be a good day to stay outdoors and get some fresh air, so we worked in the yard all day. We had our work cut out for us, as there were layers upon layers of leaves to rake up in the backyard flower beds, but we made a little progress and it’s already looking better. With the craziness of the weekend, I️ totally forget to meal plan, so I️’m pulling this together on Monday morning (oops!).
Meal Plan for the Week
Ground Turkey Chili – This is one of the easiest dinners to make – throw it all into one pot and there’s not much clean-up required!
Paleo Slow Cooker BBQ Pork Chops, Roasted Green Beans + Sweet Potatoes – This is a new recipe I️’m trying – we picked up a pack of thick-cut pork chops at BJ’s over the weekend, and I️ love easy slow cooker recipes!
Blackened Salmon, Roasted Broccolini + Brown Rice – I️ had blackened salmon last weekend at the beach and it was so good that it inspired me to make our own. I️ think the blackening seasoning takes away some of the intense fishy taste that salmon sometimes has.
Slow Cooker Garlic Honey Chicken, Peas + Potatoes – This is a highly underrated recipe that I️ always forget about, but when I️ make it, I️ wish we did it more often!
Cauliflower Crust Pizza – We always try to do pizza Fridays and I️ either make my own cauliflower crust or pick up one from Trader Joe’s.
