Happy Monday! We had a nice weekend filled with a mix of relaxing and productivity, but it went by way too fast! Saturday was a combo of Pure Barre, errands and working in the yard and Sunday, we made Paleo donuts for breakfast and had the girls’ first swim lessons of the season in the afternoon. I️ didn’t touch my laptop all weekend, so this week’s meal plan is hitting the blog kind of late – oops!
Meal Plan for the Week
Slow Cooker Honey Balsamic Pork Chops, Roasted Potatoes + Green Beans – I️ have pork chops in the freezer to use, and I️ love a good slow cooker meal (soooo simple!).
Ground Turkey Meatloaf, Mashed Potatoes + Peas – We rarely do meatloaf but everyone actually eats it, so I️ need to remember to make this more often!
Shrimp Tacos – I️ picked up shrimp at Trader Joe’s this week and since our Sunday lunch at Cabo Fish Taco was a fail (Brynn cried the whole time so we left), I️ thought we’d try to make something similar at home!
Twice Baked Sweet Potatoes – Haven’t made these in a long time but they taste so good! It requires a little more prep since you have to bake the potatoes first, but worth it.
Cauliflower Crust Pizza – Friday pizza night tradition going strong over here…and I️’ve been loving the broccoli kale crust from TJ’s too!
