I️ haven’t been meal planning the past few weeks, mainly because it’s hard to know what I️’ll be able to find at the grocery store right now. Ultimately, lack of planning meals a lot of last-minute decisions about dinner – so I️ like to turn to my slow cooker to make life easier. I️ thought I️’d share a round-up of my favorite slow cooker meals in case you needed some dinner inspiration, too!

Slow Cooker Meals I️ Love

Pork Chops with Apples + Onions – This could also be done with a pork tenderloin if you don’t have pork chops on hand.

Orange Chicken – I️ generally prefer Chinese food cooked in a skillet, but sometimes it’s nice to throw it all in a crockpot for an easy dinner.

Chicken Pot Pie Soup – This one is so good! Adding the cashews really amps up the creaminess factor.

Buffalo Chicken – Serve this over sweet potatoes for a delicious dinner!

Hawaiian Chicken – One of my favorite chicken recipes, really good served over rice or riced cauliflower.

Salsa Verde Chicken – Love this over riced cauliflower or in tacos or enchiladas.

Pesto Chicken – I️ always buy vegan pesto from Trader Joe’s since I️’m dairy-free and most pesto recipes include cheese.

Honey Mustard Chicken – This one is super easy and most of us probably have these simple ingredients in our pantries!

Sweet Potato Chipotle Chili – I️ also like plain chili, but this one with sweet potatoes and smoky chipotle peppers really adds something!

White Chicken Chili – Love the flavor of this one.
Spinach, Sausage + White Bean Soup – This is a delicious soup that’s good for you too.

Teriyaki Chicken – One of my favorite teriyaki recipes – so good!
Lasagna Soup – I️ haven’t made this one in years since I️ don’t eat dairy or gluten, but if you like lasagna, you’ll love this soup!

Pulled Pork – This is my favorite way to prepare a pork loin. It’s also versatile and you can use the leftovers for days.
Chicken and Dumplings – This one is *not* very healthy, but I️’d call it comfort food and it only has a few ingredients.
Many of these slow cooker meals are Paleo and Whole30 friendly, which is a great plus! Being home 24/7 can be hard on the waistline, but I️’ve found that continuing to eat a healthy, balanced diet and getting in daily exercise really helps.
