{Recipe} Healthy Turkey Stroganoff

I find myself lacking creative dinner ideas most nights of the week. I have an incredibly extensive Pinterest board dedicated to all kinds of recipes….but most of them aren’t “healthy” and I wouldn’t eat those things except for special occasions. Lately, I’ve been taking recipes I find on Pinterest and recipe websites and substituting healthier ingredients. Last night was no exception. We had lean ground turkey that needed to be cooked, so I decided to make Turkey Stroganoff. A dish that’s usually loaded with fat (and beef, not turkey) – I decided I was up for the challenge! Here’s my version:

Turkey Stroganoff

Serves 4

1 lb lean ground turkey

1 tbs. butter (you could do without this)

1/3 cup dry white wine

1/4 cup flour

1 1/4 cups low-sodium beef broth

1 tsp. mustard

1/3 cup nonfat Greek yogurt

pinch of oregano and basil

pinch of garlic powder

salt and pepper, to taste

2 cups whole wheat pasta of your choice, cooked and drained

1. Brown the ground turkey and drain excess liquid. Set aside.

2. Add pasta to boiling water.

3. In a skillet, add 1 tbs. butter and melt. Pour wine into skillet and simmer.

4. Whisk flour with 1/4 cup of the beef broth, mix well until smooth. Stir mixture into skillet, whisking until mixed well with the wine/butter.

5. Stir in remaining broth and 1 tsp. mustard.

6. Add spices and browned ground turkey to skillet and stir until mixed. Allow to simmer for a few minutes.

7. Just before serving, stir in the nonfat Greek yogurt and mix well.

8. Serve over pasta. Enjoy!
