As a kid, Christmas Day was exciting for the obvious reasons, but I️ also remember being so excited to wake up and enjoy fresh cinnamon rolls while Christmas music played in the background early in the morning. We continued this Christmas brunch tradition at my parent’s home once we got married and had our first daughter.

Several years ago, when we moved away to Memphis, my parents started traveling to our home for the holidays so our girls could wake up in their own beds and celebrate Christmas at our house. I️ took over the Christmas brunch prep when we started hosting the holidays, and I️’ve enjoyed coming up with delicious ideas for us to enjoy on Christmas morning. I️ tend to change things up with our menu, but I️ always include a pan of fresh cinnamon rolls!
I️ enjoy brunch and appetizer-style foods, but I️ also like to make sure I️’m incorporating protein so we won’t be starving in an hour! Eggs are my go-to, and I️ love adding these Great Day Farms Hard-Boiled Eggs to my menu – they make brunch prep so easy! They are available in packs of 2 or 6 in the deli section of your local Walmart – or you can do what I️ do and use Grocery Pickup for all of my holiday essentials! This year, I️’m including two new recipes in my Christmas morning repertoire – I️ will share them below, along with several other brunch ideas to inspire you.
Christmas Brunch Ideas

Mini Egg + Avocado Toasts
You will need:
A loaf of French bread
A 6-count package of Great Day Farms hard-boiled eggs
1-2 avocados
Lemon juice
Seasoning (I️ like Trader Joe’s Everything But The Bagel seasoning!)
Slice your bread into thin medallions and toast in the oven at 350 degrees for 5-7 minutes. Cut the avocados, remove the pit and scoop the flesh into a bowl. Mash with a fork and add a spritz of lemon juice. Using a sharp knife, thinly slice your hard-boiled eggs lengthwise into flat slices. When your bread is done toasting, remove from oven. Using a fork, add a small amount of mashed avocado to cover surface of each bread slice, add a slice of hard-boiled egg and top with your seasoning.

Chicken Salad Phyllo Cups
You will need:
Chicken
Celery
A 6-count package of Great Day Farms hard-boiled eggs
Mayo, Greek yogurt or hummus
Dried Cranberries
Seasoning of your choice (I️ like garlic and black pepper)
Phyllo dough or cups
Begin by prepping your chicken salad. I️ use this recipe and prefer to cook my chicken in the slow cooker, shred it into a large bowl and allow to cool before assembling. Prep the phyllo dough or cups according to package directions. If you’re using dough, you’ll want to cut it into squares and shape each piece into a ‘bowl’ using a mini muffin tin before baking. Chop up your celery and hard-boiled eggs and set aside. Add your desired amount of mayo, yogurt or hummus to the bowl of chicken and stir to combine. You will want to make sure you add enough to hold the chicken salad together! Next, add your chopped celery, eggs and dried cranberries along with your seasonings of choice and stir to combine. Once the phyllo dough is ready, spoon your chicken salad into each cup and serve.
