Coming home from vacation is not easy – especially when it comes to getting back in the swing of things. Fortunately, my friends over at Freshly graciously sent over meals for FOUR dinners last week, so I didn’t need to worry about weekly meal prep…can you say awesome?! If you’re not familiar with Freshly, here’s a little background! When you sign up, you get to choose from four different plans, ranging from 4-12 meals per week (makes weekly meal prep easy!) and then you select each meal that you’d like to receive. One of the things I really love is that there are options for so many different diet preferences – including Paleo (yay!) – and everything is made with all natural ingredients, no artificial preservatives and it’s prepared and sent to your doorstep completely fresh and never frozen.
I ended up choosing four Paleo options, which meant I could keep my usual eating habits on track for the week. Truthfully, that’s why we don’t go out to restaurants very often, since I like to know exactly what I’m eating and I try to avoid dairy, excessive sodium and grains as much as possible. With Freshly, I didn’t have to worry about that, since the ingredients and nutrition facts were printed right on the package. And, I’d be remiss to not mention how delicious the meals were! I tried the following:
- Carved Turkey – Loved the flavor combinations…mashed sweet potatoes were topped with turkey and cooked apples, and the roasted brussels sprouts were amazing.
- Sausage & Peppers – We eat a lot of roasted chicken sausage, but I’d never thought of combining sausage and sauteed peppers over cauliflower rice before – so good!
- Peach Balsamic Pork Chops – This had an amazing flavor – the pork chop was covered in an almond meal breading and the peach and balsamic flavor combo was outstanding.
- Chicken Marsala – We love a good chicken marsala dish, so I was excited for this one! The spaghetti squash ‘pasta’ made this a Paleo-friendly dinner.
All of these were meals we’d normally prepare at home, but with Freshly, it was basically like having a personal chef cook dinner for us. Honestly, my husband and I both love cooking, so we’d never give it up completely – but for weeks when life gets crazy or even just for lunches during the week, Freshly is a fantastic option to add into our weekly meal prep repertoire!
