Happy Friday, y’all! Today I’m excited to share my recipe for a vegan green energy smoothie that tastes great AND it’s good for you! Even though I try to sneak some greens in my lunch and dinner every day, I feel like I’m not eating enough fruit or veggies on a daily basis – that’s where this smoothie comes into play. I’m not kidding you when I say I haven’t had that energy slump around 2pm (you know the one I’m talking about) since I started drinking this smoothie for lunch!
I actually didn’t know much about spirulina when Sari Foods Co. asked me if I’d like to try it, but I started doing a bit of research and found out that spirulina is made up of a blue-green algae that is arguably one of the most nutrient-dense foods ever. It’s also high in protein and vitamins, which can help boost your energy! I found the taste was mild at most and you probably won’t even taste it depending on what fruits and veggies you add to a smoothie.
The best thing about smoothies is you can’t really mess them up! You can add your favorite fruits and veggies and a scoop of protein to really pack a punch and it makes a great lunch on-the-go (or a post-workout snack!).
Ingredients
- 3/4 cup unsweetened almond milk
- 1 cup strawberries, halved
- 1/2 of a medium banana
- 1/2 cup spinach
- 2 tsp almond butter
- 1 scoop vegan protein powder (I used Vega)
- 1 tbsp spirulina
- Ice
Instructions
- Pour strawberries, banana and almond milk in a blender and blend until liquified.
- Add almond butter, protein powder, spirulina and ice and blend until smooth and there are no ice chunks remaining.
- Pour smoothie into a glass and serve!
