Happy Monday, y’all! Not sure how the weather is where you are, but it’s finally fall in Memphis and I LOVE IT. Gimme all the pumpkins, coffee and (healthy) comfort foods! It’s been extra cozy here the past few days since it’s been overcast and rainy – which I surprisingly don’t mind in the fall. Any other time of the year, I don’t love cloudy days…go figure! I’m really looking forward to this week’s clean eating meal plan – in particular, tonight’s dinner. Let’s take a peek at this week’s menu!
Clean Eating Meal Plan for the Week
Slow Cooker Pesto Chicken, Sweet Potatoes + Broccoli – This is such a good flavor combo! I picked up pre-made vegan pesto at Trader Joe’s this weekend since it’s so much easier than making it from scratch.
Coconut Curry Turkey Meatballs, Mashed Cauliflower + Peas – My girls actually love turkey meatballs…I don’t know why we don’t eat this more often!
Cilantro Lime Chicken Bowls – I’ll prep my chicken in the slow cooker and layer over cauliflower rice and veggies.
Paleo Shepherd’s Pie – I haven’t made this since last fall, but it has all of the taste of comfort food without all the not-s0-good stuff!
Cauliflower Crust Pizza – After trying several store-bought options, I’ve decided my own cauliflower crust recipe is still the best! It really isn’t all that difficult to prep, either.
