Happy Friday! We’ve been busy over here this week between jumping back into the routine after Spring Break and keeping up with the Spring Cleaning Challenge. When it comes to our clean eating meal plan, I did something a little differently this week and based most of our dinner ideas off of things I found in our pantry. I try to only buy what we need each week, but inevitably (especially with pregnancy brain!) I end up buying something we already had on hand. I noticed our pantry was still pretty full the past few weeks, so I decided I’d pull together some meals with what we have.

Clean Eating Meal Plan for the Week
Monday
Salsa Chicken + Mexican Cauliflower Rice – A go-to recipe of mine but we haven’t had it in a while! I had a new jar of salsa sitting in the pantry, so I decided this would be a good dinner this week.
Tuesday
Cauliflower Gnocchi with Smoked Turkey Sausage and Spinach – We are very well-stocked on Trader Joe’s cauliflower gnocchi at the moment and this is a delicious recipe I kind of made up on a whim a few months ago. I’ll have to share it soon!
Wednesday
Turkey Spaghetti – We have lots of regular pasta and chickpea pasta in the pantry, so I’ll probably make regular for everyone else and either do chickpea pasta or carrot spirals for myself!
Thursday
Slow Cooker Hamburger Soup – This was a recipe I had on my meal plan a few months ago and never got around to making it, so I have all of the ingredients on hand!
Friday
Cauliflower Crust Pizza – We actually didn’t have pizza last week, so I’m looking forward to pizza night again – and the girls always eat it without complaints, so it’s one of our favorite dinners. 🙂
