Happy Monday! We’re coming off a super busy but fun-filled weekend, including a fun fitness class that I’ll be sharing about soon – stay tuned for that! I’ve been even more excited about creating our weekly dinner meal plan ever since Trader Joe’s opened because I’ve been able to add even more interesting things to the mix. On this week’s meal plan, there’s a couple of our fall favorites mixed with a few newer ideas!
Weekly Dinner Meal Plan
Monday
Oven-Roasted Turkey Breast, TJ’s Roasted Julienne Root Vegetables + Broccoli – We’ve been craving turkey and I grabbed a frozen turkey breast at Kroger last week when they were on sale. This one is super easy and I might follow the slow cooker directions to make dinner even more simple!
Tuesday
Paleo Turkey Sweet Potato Chili – One of my fall favorites! Love the blend of sweet and spicy.
Wednesday
Teriyaki Chicken + Pineapple Fried Rice with Green Beans – This is a new-t0-us recipe that I found on the Trader Joe’s website. I haven’t decided if I’ll use brown rice or cauliflower rice yet, but it looks yummy!
Thursday
Spicy Chicken Sausage, Apples + Sweet Potato Sheet Pan – This is a simple, easy to prep and clean up (one-pan!) dinner.
Friday
Cauliflower Crust Pizza – Using my favorite cauliflower pizza crust recipe, of course! I like to add lots of toppings like mushrooms, bell pepper, jalapeno pepper and turkey sausage.
