I don’t know about y’all, but I’m so ready for the warm weather to stick around! We’ve had a few amazing days and then it turns cold again, but it looks like we’re in for a nice week ahead (fingers crossed!). As it gets nicer out, I’m getting the urge to add grilling out to our weekly meal plan…well, technically Michael does the grilling, but you get the idea 🙂 I’m looking forward to a few new recipes we have planned for this week and a few of our standbys too. Without further ado, here’s our weekly meal plan:
Monday
Paleo Pork Carnitas, Quinoa + Broccoli – This is a new-to-us dinner, but Cheryl over at 40 Aprons has some amazing Paleo recipe ideas!
Tuesday
Grilled Chicken Kabobs, Garlic Ranch Potatoes + Peas – If the weather is nice like it’s supposed to be, we plan to grill out. Verdict is out if the threenager will eat this dinner…
Wednesday
Sheet Pan Sausage, Roasted Potatoes + Green Beans – This is a quick dinner that’s so easy to throw together – I’ll have this prepped and Michael can pop it into the oven while I’m at Pure Barre!
Thursday
Cilantro Lime Chicken Bowls with Cauliflower Rice + Broccoli – Really excited to try this one – we love Mexican-inspired recipes and cilantro-lime anything is so good!
Friday
Cauliflower Crust Pizza – We ended up not having time to make this crust last week, so I’m hoping we can give it a test run this Friday for pizza night.
