Happy Monday, y’all! It’s an extra happy week here, since Spring Break is next week and we’re excited for a little R&R at the beach! With that said, this weekly meal plan is a bit more simple than usual – I figured we’d be busy this week getting ready to travel and didn’t want to go crazy with time-consuming recipes. And since I won’t be meal planning next week, I’ll probably take a week off from sharing my weekly meal plan with you guys – but do follow along on Instagram, because I bet I’ll have lots of photos to share! Here is this week’s easy meal plan:
Monday
Salsa Verde Chicken, Quinoa + Broccoli – This is one of my go-to recipes on nights when I go to Pure Barre – I pop the chicken in the crockpot and it’s ready when I get home!
Tuesday
Tacos with (Leftover) Salsa Chicken, Mexican Riced Cauliflower + Peas – If you ask Blair what her favorite foods are, tacos would be at the top of the list. I usually make a ‘taco’ salad with spinach and eat some plantain chips with mine. Making this super easy by using leftover chicken from Monday night’s dinner!
Wednesday
Egg Roll in a Bowl, Roasted Sweet Potatoes + Teriyaki Green Beans – We really love this Asian-inspired Paleo dinner, but since the girls won’t eat the cabbage, I’m making sweet potatoes and green beans to make everyone happy. 🙂
Thursday
Chili – This is basically the easiest way to prep dinner – all in one pot.
Friday
Pizza – We did a cauliflower crust last week and the verdict is: I didn’t mind it and it felt like I was eating a lot less ‘bulk’ since the crust was mainly veggies BUT it was a lot of work and it didn’t hold up like a regular crust (or even a Paleo almond flour crust) would. Not saying I wouldn’t make it again, but it probably won’t be something we make every week. When Trader Joes finally opens, I’m headed straight for their pre-made cauliflower crust! Realllllly hope it’s dairy-free…
