Hi y’all! This week’s clean eating meal plan is coming to you super late – the holiday weekend threw me off some kinda bad and I’m playing catch-up this week. Fortunately, we did have a productive weekend and even installed a new patio, which I plan to share about on the blog this week since it’s a quick, inexpensive DIY project!
I didn’t include anything new in this week’s clean eating meal plan, but there’s definitely a summer theme going on, so I’m not complaining! Here’s what’s on the menu:
Pulled Pork BBQ, Roasted Sweet Potatoes + Mushrooms and Peas – My husband makes the best NC BBQ in the crock pot and the best part is, there are leftovers for days! I usually put the pulled pork on a salad for lunch.
Paleo Taco Bowls with Mexican Cauliflower Rice + Broccoli – The kids and my husband eat tacos, while I make mine into a taco bowl, putting the ground turkey over spinach, layered with cauliflower rice and hummus and salsa
Slow Cooker Honey Mustard Chicken, Sweet Potato Fries + Green Beans – This has become one of our go-to recipes because the crock pot is where it’s at for an easy dinner and the honey mustard chicken tastes so good!
Grilled Jalapeno Turkey Burgers, Grilled Potatoes + Broccoli – Hopefully the rain holds off – we haven’t really grilled as much as usual because of the pop-up storms we’ve had lately!
Cauliflower Crust Pizza – I finally shared my crust recipe on the blog last week and I love how much ‘lighter’ dinner feels without all the extra bread and carbs!
